This machine, conceived to pre-crystallize chocolate masses, is a further development of the reliable MST-model. The large cooling surface of all cooling stages as well as the long holding time of the mass within the machine are decisive factors for an optimal tempering result. The frequent scraping of a very thin chocolate film makes for a regular, fine crystal structure. The cooling takes place with the supply of cold water. For the night operation an internal hot water circuit is activated to prevent the machine from "freezing".
