Description
The machine tempers chocolate masses to the pre-selected temperature continuously. A pump (not included) conveys the mass through every single cooling/heating section where the scrapers provide for a good heat exchange on the cooling surface. Cold water is the cooling agent which is supplied to the cooling disks through magnetic valves. Resistance sensors permanently take the mass temperature in every single tempering zone and compare the values with the programmed parameters. If there is any fluctuation, the control unit proceeds to regulate the temperature to the selected value via magnetic valves. The
last temperature zone in the upper area of the machine can be used for cooling but also for heating as a reheating system. During standstill periods, the machine is changed over to night function whereby warm water flows through the machine and the magnetic valves close.
