Description
The machine continuously heats chocolate masses to the preselected temperature. The mass is pumped through the individual cooling and heating sections by a mass pump (not included), in which scrapers ensure optimum heat exchange on the cooling surface. Cold water is used as the cooling medium, which is fed to the cooling disks via solenoid valves. The mass temperature of the individual temperature control zones is continuously measured via resistance sensors and compared with the set data. If there are any fluctuations, the control system intervenes and regulates the temperature to the set value via the solenoid valves. The last temperature zone in the upper area of the machine can be used either for cooling or for heating as a reheating stage. For downtimes, the machine is switched to night mode, whereby hot water flows through the machine and the solenoid valves close.
